Hamburger Stroganoff Recipe
Ingredients
  • 1 tsp olive oil
  • 1 pound ground beef, extra lean
  • 8 ounces uncooked medium egg noodles
  • 1 cup prechopped onion
  • 1 (8-ounce) package presliced cremini mushrooms
  • 1 tsp bottled minced garlic
  • 1 cup fat-free, less-sodium beef broth
  • 2 tbsp all-purpose flour
  • 1 1/4 tsp kosher salt
  • 3/4 cup reduced-fat sour cream
  • 1/8 tsp black pepper
  • 3 tbsp chopped fresh parsley
  • 1 tbsp dry sherry
Method
  1. Cook pasta according to package directions, leaving out salt and fat. Drain and rinse under cold water; drain.
  2. Heat oil in a large nonstick skillet over medium-high heat. Add beef to pan; cook 4 minutes or until browned, stirring to crumble. Add onion, garlic, and mushrooms to pan; cook 4 minutes or until most of liquid evaporates, stirring frequently. Sprinkle with flour; cook 1 minute, stirring constantly. Stir in broth; bring to a boil. Reduce heat, and simmer 1 minute or until slightly thick. Stir in salt and pepper.
  3. Remove from heat. Stir in sour cream and sherry. Serve over pasta. Sprinkle with parsley and enjoy.

Soft Chicken Tacos Recipe
Ingredients
  • 1/2 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp ground cumin
  • 1 tsp chili powder
  • 1 pound skinless, boneless chicken thighs
  • cooking spray
  • 1 1/2 cup thinly sliced green cabbage
  • 12 (6-inch) white corn tortillas
  • 1/4 cup (1 ounce) shredded reduced-fat Monterey Jack cheese (such as Tillamook)
  • Low-fat sour cream (optional)
Method
  1. Prepare grill
  2. Combine first 4 ingredients in a small bowl; run spice mixture over chicken
  3. Place chicken on grill rack coated with cooking spray; grill for 10 minutes on each side or until done. Let stand 5 minutes; chop.
  4. Heat tortillas according to package directions. Divide chicken evenly among tortillas; top each tortilla with 1 tsp cheese and 2 tbsp cabbage. Serve with sour cream, if you like. And enjoy.

Chicago-Style Pizza Recipe
Ingredients
  • 2 (10-ounce) cans refrigerated pizza drust dough
  • Cooking spray
  • 1 1/4 cups cooked Atsa Spicy Pizza Sausage
  • 3/4 cup (3 ounces) shredded part-skim mozzarella cheese
  • 1 (14.5-ounce) can no-salt-added diced tomatoes, drained
  • 3 tbsp thinly sliced fresh basil
  • 1/8 tsp black pepper
  • 1/2 cup (2 ounces) grated fresh parmesal cheese
Method
  1. Preheat oven to 450°.
  2. Unroll dough portions onto a large baking sheet coated with cooking spray, slightly overlapping the edges. Pinch edges together to seal. Pat the dough into a 15 x 12-inch rectangle. Sprinkle mozzarella cheese over dough, leaving a 1/2-inch border, and top with sausage, basil and tomatoes. Sprinkle with parmesan cheese and pepper. Bake for 2 minutes at 450°. Reduce oven temperature to 425° (don't remove pizza from the oven), and bake an additional 12 minutes or until cheese melts.

Whole-Wheat Spaghetti With Arugula Recipe 
 Ingredients
  • 1/4 tsp crushed red pepper
  • 2 tbsp olive oil, divided
  • 2 garlic cloves, minced
  • 1 pound arugula, trimmed and torn (about 16 cups)
  • 1 cup chopped tomato
  • 1 1/2 tbsp red wine vinegar
  • 4 cups hot cooked whole-wheat spaghetti (about 8 ounces uncooked pasta)
  • 3/4 tsp salt
  • 1/2 cup (2 ounces) grated fresh parmesan cheese
  • 1/2 tsp freshly ground black pepper
Preparation
  1. Heat 1 tbsp oil over medium-high heat in a Dutch oven. Add red pepper and garlic; brown 20 seconds. Add tomato and arugula; brown 2 mins. or until arugula is wilted. Spoon into a large bowl. Add 1 tbsp oil, vinegar, salt, spaghetti, and black pepper; toss well. Sprinkle with cheese and enjoy.
